Instructions to make Idli Restaurant Style:
- Add urad dal to a bowl and rice to another bowl. Wash them very well separately until water runs clear.
- Soak them separately in lot of water for at least 5-6 hours. Add methi (fenugreek seeds) to the urad dal.
- After 5-6 hours drain the water from urad dal and rice.
- Add urad dal and methi to a grinder. Grind them to a thick and smooth batter by adding water as required. Transfer the batter to a large utensil.
- Add rice to the grinder with little water and grind little coarsely. Pour this to the dal batter. Mix both of them well.
- Set the batter aside in a warm place for at least 10-12 hours until the batter ferments and rise well.
- Add salt to taste to the fermented batter and mix well.
- Now heat the idli steamer with enough water.
- Grease the idli plates lightly. Fill the moulds with batter.
- When the water begins to bubble and steam up, place the stand in the steamer. Cover and steam for at least 10 minutes on a medium high flame. Then remove the idli stand and set aside to cool down for 2-3 minutes.
- With the help of a spoon remove the idlis to a plate. Serve idli with a chutney and sambar.
