  3. Get 100 g (3.52 oz) Button mushrooms
  4. Prepare 100 g (3.52 oz) Eryngii mushrooms
  5. Get 100 g (3.52 oz) Shimeji mushrooms
  6. Get 100 g (3.52 oz) Maitake mushrooms
  7. Make ready to taste Green onion
  8. Take Sauce
  9. Make ready 60 ml (2.02 fl oz) Okonomi sauce
  10. Get 60 ml (2.02 fl oz) Ketchup
  11. Get 30 ml (1.01 fl oz) Red wine
  12. Prepare 2 tsp Butter

Here is how you cook that. I used tofu and vegetables to make these grilled skewers. While marinating them in the yogurt spice mix I also added the spice mix and you won't believe how flavorful the skewers were. I had some guests come over and they all enjoyed the skewers with Santa Rita red wine.

Instructions to make Tofu Grill with Red Wine & Mushroom Sauce:
  1. Mix okonomi sauce, ketchup, red wine in the bowl and then add butter.
  2. Wrap and heat at 600W for 5 mins., then mix well.
  3. Slice all mushrooms into bite size pieces.
  4. Wrap and heat at 600W for 5 mins.
  5. Mix sauce & mushrooms. (Use the juice from mushrooms too.)
  6. Slice the deep-fried tofu into 2 portions.
  7. Grill the deep fried side first. No need to use oil, it comes out from the tofu itself.
  8. Flip it over when the bottoms became a bit crunchy.
  9. Grill the opposite until it becomes partly yellow brown.
  10. Serve with wine & mushroom sauce with green onion on top.
  11. You can get Okonomi sauce at Amazon or International Markets like Jungle Jim's in Ohio.

I had some guests come over and they all enjoyed the skewers with Santa Rita red wine. I would highly recommend the Badia spice mix along with Santa rita wines. Feel free to use whatever you like here. I used a combo of braggs, miso broth, garlic, a dash of hot sauce and some red wine vinegar.
