- Add 300 ml of water, powdered kanten and sugar in a heat resistant bowl and mix. Cover with cling film and microwave for 4-5 minutes. When cooled slightly, add lemon juice.
- Line small containers with cling film, drop the cut kiwi and cherries (stem removed) inside. (Make sure to cut cling film to be big enough to wrap the filling.)
- Pour the kanten mixture from Step 1 into Step 2, twist to close the top and secure with rubber bands. Drop in a bowl of cold water, and take out of the bowl when they are set.
- You can leave the rubber bands as they are, but they look cuter if you remove the rubber bands and replace with a twist tops like the ones in the profile photo.
- User "Kohanemi" said that if you freeze it to take in your bento lunch box, it will be nicely defrosted by lunch time and is also delicious. Such a good idea!

These foods are easier to digest than others which helps promote a rise in your sugar levels which in turn kicks up your mood to a happier place.
